Am I Domestic Yet?

Last year, Doug & I planted 3 fruit trees in the backyard (well, he did). One died, the other one is struggling, but the apple tree looks pretty good. In fact, this year we were able to pick about 24 apples off the tree (small ones). To tell the truth, the apples are a little tart, but I couldn't bear for them to go to waste. So what to do....what to do?

I made the freezer jam, so I thought I might try apple jelly. Sugar can make anything taste good, right? Well, sometimes I have to be a little flexible with my recipes, because I don't have a clue most of the time. I am the FIRST to admit that cooking is not my calling!

Upon trying out the steamer/juicer/canner thing for the first time, I found it wasn't too difficult. However, our little apples just didn't make much juice, so I didn't have enough fresh juice for apple jelly. PLAN B: I found a recipe for apple butter in the canner box. It looked simple. You use only a small amount of juice, puree the apple remains that you tried to juice, mix with brown sugar, cinnamon and nutmeg, boil, and pour into hot jars and seal. It didn't turn out too bad. Occasionally, I can taste a little of the skin which did not puree well, but on a PB&J sandwich it is pretty tasty! All of the jars sealed, so nothing was wasted.

Yes, my friends.....even I can make something! It wasn't terribly messy and I think I have my year supply of jelly!

Look at you the Domestic Deva. You are much better than I when it comes to canning (and many other things as well), I still don't have a clue. Someday I will give in and realize that I am a Utah mom and that just comes with the territory...I must learn to can!
